The ultimate fudgy chewy cookie packed with three types of chocolate: chocolate chips, chocolate smarties and chocolate eggs - who wants a few?
I think you are going to LOVE these cookies with their pools of melting chocolate, soft and chewy texture, golden crisp outside and they are naturally vegan and gluten-free π±
What makes them a “cheesecake cookie?” It’s the added cream cheese in the cookie dough which adds a seriously soft and chewy texture inside and crisp sugary cookie outside.

Vegan Easter Cheesecake Cookies π«πͺ
⭐︎allow 55g @nushfoods cream cheese and 40g vegan butter to come to room temperature then beat together till smooth
⭐︎add in 75g golden caster + 25g light brown sugar and beat till fluffy
⭐︎lightly whip 25g aquafaba till bubbly and add to the bowl with 1 tsp vanilla essence and bet again
⭐︎sift in 140g plain or GF plain flour + 1/2 tsp bicarbonate of soda and add a pinch salt
⭐︎stir to a sticky mix
⭐︎fold in 25g @doisyanddam smarties/M&Ms + 25 chocolate chips and chill the dough for 1-2 hours
⭐︎scoop and roll into 9-10 cookies, place on baking trays and top with 75g Doisy & Dam mini eggs
⭐︎bake at 160Fan/180*C for 12-13 mins till golden at the edges and sift in the middle
⭐︎cool for 10 mins then cool fully
⭐︎BITE IN and enjoy π
